I like quesadillas, you’ll be able to fill them with something they usually style so so good. I made a simple vegetarian/vegan choice on your meat free Monday dinner. I used blended beans, with smokey paprika, onions numerous chilli and coriander. I layered this with a salsa guacamole. (Making two dips into one).
It was such a simple, quick dinner and I hope you take pleasure in this recipe.

Quesadilla:
-Gently fry half a finely chopped onion.
-Add 2 minced garlic cloves and fry with spices half of tsp of salt, smokey paprika, chipotle, chilli powder.
-Add some finely chopped celery, blended peppers and cook dinner for 1-2 minutes.
-Add three tsp of passata or contemporary tomatoes and cook dinner for three minutes.
-Add some lime and end with coriander.
-In a clear pan add one tortilla and add the filling and sprinkle some cheese.
-Flip and cook dinner on either side till golden brown.
-Reduce into three items and layer with guacamole.

Guacamole Salsa.
-Mash one ripen avocado.
-Finely chop half pink onion.
-Finely chop 1 tomato.
-2 tsp of olive oil
-half of lemon and lime juice
-1/2 tsp of: chilli flakes, salt, pepper, garlic.
-Finely chopped coriander and mint.

Combine all substances collectively and assemble by layering.
