I’m undoubtedly attempting to think about completely different recipes I could make with my dwelling grown courgettes and this one needs to be my favorite by far. This can be a easy 5 components dish and it’s a mixture between a pasta and salad and it takes much less then 10 minutes to make. What else may you ask for?! It’s excellent for a summer time lunch or dinner, eat it alone or pair this with some protein akin to feta, crab or pancetta would actually elevate it.
It’s garlicky, tangy, with chilli served with a handmade gremolata. (Optionally available)
-4/5 ribbon peeled courgettes.
-Three minced garlic
-Half a pink chilli sliced
-Half a lemon
-1/2 tsp of salt, pepper.
-Pine nuts – a hand full dry roasted.
– Add some Parmesan.
-In a sizzling pan add some oil and fry the minced garlic.
-Add the chilli and cook dinner for 1 minute.
-Add the lemon zest and juice with the salt and pepper.
-Add the ribbon courgette and coat and cook dinner for a couple of minutes.
-Add the pine nuts, drizzle the gremolata and chilli.
Eat this sizzling or chilly, it’s so scrumptious that I can’t await the following batch to develop once more!! Let me know your favorite courgette recipes!! 🙌🏾
