Components:
-Four medium potatoes chopped
-1 small finely chopped onion
-Thumb of ginger lastly grated.

Β½ tsp of chilli powder, garam masala, cumin seeds, coriander powder, mustard seeds, dry pomegranate seeds
-1 dry Kashmiri chili
-2 small curry leaves.
-Handful of coriander.
-Four tbsp of passata
-Oil to fry the sauce/tarka
Methodology -Steam Four washed and chopped potatoes
-Flash fry potatoes in a scorching wok with oil and Β½ tsp salt for 3-Four minutes.
-In a scorching pan, add Four tbsp of oil and add, mustard seeds and dry chilli and curry leaves.
-Add the grated ginger and garlic after which the finely chopped onions.
-Cook dinner for 4-5 minutes till brown add all of the spices, cook dinner for an extra 2 minutes.
-Add the passata and cook dinner till you begin to see a movie of oil come to the highest of the sauce.
-Add 2 tbsp of water to sauce and cook dinner
-Add the potatoes and coat nicely within the sauce and cook dinner for 1-2 minutes, take away the chilli earlier than including coriander.
