🦐🍞 Shrimp toasts – makes 8
6 giant tiger shrimp, peeled, deveined, minced
half shallot, minced
2 tbsp Kewpie mayo
Dill & parsley, chopped
Salt & pepper

1 piece cod filet, diced
1 medium white potato, peeled, diced
2 tbsp chopped pancetta
half shallot, minced
1 half cup panko
1 cup parmesan, grated
Chopped parsley

1. Boil the potatoes till mushy sufficient to mash and drain.
2. Stir fry the shallot, pancetta, and cod over medium-low warmth. Season with salt & pepper.
3. Combine potatoes and shallot, pancetta, and cod combination in a bowl with half the parmesan and a few parsley. Refrigerate till cool sufficient to deal with.
4. Combine collectively panko, remaining parmesan, salt, pepper, and parsley in a shallow plate.
5. Take away from fridge and form into 3″ logs, it will likely be mushy so deal with with care. Toss and price within the Panko combination.
6. Bake on a wire rack at 400F for 12 minutes.
7. Broil on excessive for a couple of minutes to brown.
