A heat “breaded” mushroom and arugula salad.

I have been obsessive about this salad ever since I found it at Terroni and have been making an attempt to recreate it. That is the closest I’ve gotten and I am out of concepts lol it is adequate that I preserve making it once more however nonetheless not the actual deal like I get at terroni ๐Ÿ˜‚ attempt it out and let me know what you suppose.

What you will want:
1 small pack of child arugula, rinsed
1 pack oyster mushrooms
1 pack shimeji mushrooms
1/2 cup grated parmesan
1/2 cup panko
1/Four tsp salt
1/Four tsp black pepper
1/Four cup olive oil
Dressing: juice 1/2 lemon, Four tbsp EVOO, drizzle of balsamic vinegar / balsamic vinegrette.
Truffle burrata (optionally available)

Technique:
1. Combine arugula and dressing and plate.
2. Wipe mushrooms clear and reduce into smaller items. Do not wash as it’s going to get your toppings moist.
3. Toss mushrooms in olive oil then season with salt and pepper and toss once more.
4. Combine mushrooms with panko and parmesan then lay flat on a greased sheet pan.
5. Bake at 425F for 15 minutes or till golden brown.
6. Serve mushrooms on high of salad and high with burrata / contemporary mozzarella (optionally available).
