I’m positively not a baker, I’ve two recipes underneath my wing, a banana bread and this delicious coconut and blueberry cake. It’s tremendous scrumptious and with simply eight cabinet staples you’re positively on to a baking winner.
The one deciding query is creme fraiche or custard? .
Components:
-100g caster sugar.
-100g tender butter.
– 2 giant egg.
– 100g self-raising flour.
– 100g desiccated coconut, plus 2 tsp for topping shanafoods -100g crème fraîche, or pure yogurt – zest and juice half of lemon
– 180g punnet of blueberries or any berries you might have.
Technique:
-Warmth oven to 180C/160C fan/fuel 4.
-Beat the sugar and butter till pale and creamy, then beat within the eggs.
-Stir within the flour, coconut, crème fraîche and lemon zest.
-Add half the blueberries in a baking dish (about 18cm spherical or sq.).
-Add the cake combination and scatter over the remaining blueberries and a couple of tsp coconut.
-Bake for 35-40 minutes till golden, risen and the sponge is cooked.
-Serve with a dollop extra crème fraîche and fruit.
