Sorry I have been MIA with the prawn posts however I wanted a full 24 hours to get better from that feast… Cut up a 10lb case of stay BC spot prawns from starlobsterseafoodmarket with my pal _hakevin. That is the primary time I’ve labored with 5 lbs of…properly…something lol so I knew I needed to make a number of dishes.

We break up the shrimps into Four parts and made some sashimi with fried heads, steamed with spicy garlic soy sauce, lotus leaf steamed rice (recipe tomorrow) and this salted egg yolk fried prawn 🥰

What you may want:
~16-20 shrimps, shell on or off
eight salted egg yolks
1 cup corn starch / potato starch
1/Four cup butter, reduce into small items
1/Four tsp white pepper
1/Four tsp salt
A LOT of oil..

Technique:
1. Season starch with salt and pepper.
2. Pat dry shrimp and dirt within the starch combination.
3. Steam egg yolks for 15 minutes after which mash with a fork.
4. Relying in your frying vessel, fill sufficient oil to cowl shrimp. A pleasant deep pot is nice.. For those who’re utilizing a small pot fry in batches.
5. Fry every batch of shrimp for Three minutes earlier than setting on paper towel.
