One among my favourites, a dish Iโ€™ve liked by my mum making it. Itโ€™s filled with flavour, style and extremely straightforward to make.

-Three aubergines
-Three medium onions, chopped.
-1 inexperienced chilli sliced.
-Spices: 1tsp of salt, chilli powder, floor cumin, garam masala, coriander powder.
-1 tsp cumin seeds.
-Half tin chopped tomatoes.
-Handful frozen peas.
-Recent coriander.

-Wash the aubergines,
-Begin by charing them on a fuel cooker, (can grill them too) preserve rotating for a good prepare dinner.
-Cook dinner in oven or air fryer for 30 till soften.
-In a big pan fry the cumin seeds in oil and add the onions, chopped chunky. Cook dinner till brown.

-Add the tomatoes and prepare dinner till you see a movie of oil.
-Add the peas, prepare dinner for five minutes.
-Reduce the aubergines, and scoop out the flesh, mash with a fork.
-Add to the tomatoes and prepare dinner properly, for 15-20 minutes till it mixes properly and turns a darkish crimson color.
